DYPLEX


DYPLEX is a new-generation casing with dynamic permeability:

• at temperatures above 60 °С the WVTR and OTR of the casing substantially increase (up to the level of permeable casings);

• at temperatures of 0...+6 °С the WVTR and OTR of the casing are dramatically reduced (down to the level of barrier casings).

The recommended shelf life of cooked, cooked-and-dry and semidry sausages produced in the DYPLEX casing is 60 days.

 

ADVANTAGES

High permeability of the casing to process smoke and water vapor (at temperatures 65–75 °С) makes it possible to roast and smoke the products to impart to them the traditional smoked taste and flavor.

Low permeability to oxygen and water vapor (at temperatures 0 ...+6 °С) provides for the following advantageous properties:

• the shelf life of sausages in the DYPLEX casing is comparable with that of sausages in multilayer barrier casings (up to 60 days);

• zero losses during the thermal processing and storage of meat and sausage products;

• microbiological stability of the products during storage;

• retardation of the oxidation processes leading to rancidification of fats and changes in the natural color of the meat product;

• excellent selling appearance (no ˝wrinkles˝) of the finished products throughout the shelf life.

The high mechanical strength of DYPLEX casing makes it possible to use high-capacity automatic and semi-automatic clippers, which provides for a high rate of production, and stability of the shape.

Microbiological resistance. The polymers used for production of DYPLEX casing are inert to the action of bacteria and mold fungi. This improves the hygienic characteristics of both the casing itself, and the finished sausages.

High heat resistance of the polymers used for production of DYPLEX casing significantly extends the temperature range of use of this casing in comparison with collagen and viscose-reinforced casings. The casing is resistant not only to high temperatures of smoking, but also to their prolonged effect.

The high oxygen barrier capacity compared to collagen and viscose–reinforced casings ensures the following advantageous properties:

•reduction of the oxidation processes, in particular, rancidification of speck;

• preservation of the individual flavor of spices in the finished products throughout the shelf life.
